Chapter 9, grow plants not autoimmune diseases and of course we have a whole epidemic of autoimmune diseases the numbers are ridiculous something like 50 million people have been diagnosed and worth spending towards of billions of dollars. So how can someone switching to a plant based diet help with their autoimmune. What do you talk about in this chapter?

[00:22] DR. JOEL KAHN: Yeah trying to find the science there. And what we do know is there is this fancy word called inflammation the word has inside it the word flame and fire your joints is on fire, your kidneys are on fire, your brain on fire, your blood vessels. It is not a good process. You can measure with blood work or you can see it on a physical exam on the joints and we do know that animal based foods even if you are maybe buying grass fed and free range, animal-based foods absolutely has chemicals in them that can’t be allowed to favor inflammation. Whereas plant based diet is used because it is anti-inflammatory diet. We want to make sure you get lots of plant-based omega 3, lots of flaxseeds, lots of chia seeds, lots of walnuts and nuts are all anti-inflammatory. So there are some dramatic published examples of diseases as serious as lupus being reversed on a plant based diet. Psychiatrist in Houston Texas despite the leading African inspector Gardner I talk about it in the book. You got the examples Serena Williams Wimbledon champion and her autoimmune dry eyes syndrome called chagrined is going away of course that’s the story in the news that published science but seems pretty true. Dr. John McDougall in Saint Louis California has published some science. We need more data we need more science but the anecdote, the case reports, the Facebook user group reports so cleaning up the diet and replacing it with giant green foods which is rich in flaxseeds, giant salads, beans and such have been very encouraging. So I would encourage anybody dealing with an autoimmune disease to look at diet as a pathway to restore health and read the chapter in the book and give it a try because you sure aren’t going to have a side effect by adopting a healthy plant based diet.
