[00:01] REENA JADHAV: On to chapter seven which is all about the cancer and plants connection; so grow plants not cancer cells.

[00:10] DR. JOEL KAHN: So you know there’s no you don’t want to oversell there are people that have eaten plant diets and develop cancer it’s a very complex process of diet, of stress, of sleep, of toxins, of genetics. However on average studies in Lomow Linda say many of the cancers are less common in people that have plant diet certainly breast cancer, prostate cancer are 2 of the big ones. And there’s some data the other way of course strong data from the World Health Organization that processed meats like bacon, sausage, chocolate, pepperoni are related to cancer of the colon so strongly that the World Health Organization two and a half years ago said bacon isn’t a risk, bacon causes cancer, I thought it cause cancer. It sad that it is ignored by the medical community, it’s ignored by our hospital system there should it should be illegal to serve bacon in the hospital, it should be illegal to give kids hotdogs in the children’s hospital. Because the data was reviewed so carefully, that sort of thing so you know I don’t want you really eat soy hot dogs but I am ready to soy hotdogs  rather than the processed red meat or hotdog I would rather you substitute everywhere you can lower your risk. And if you’re getting therapy for cancer you do want to keep your calorie count up we need abundantly but eat a plant based diet full of vitamins and nutrients, fiber and such. There’s a unique plant program called chamoli which is a dietary program during chemotherapy that it’s a very promising data but nobody’s curing cancer with a ground up beef and hotdog so get out that stuff.

[01:58] REENA JADHAV: Which plants are your favorite food for someone who does have cancer and is looking to make a couple of minor changes, some of them will get freaked out with big changes. What would be the top one two or three plants that you say start today if you have cancer these plants have got to be a part of your diet.

[02:18] DR. JOEL KAHN: First would probably be the family called the brassica family some people come cruciferous vegetables but we’re doing it short on here to broccoli, to cauliflower, to Brussels sprouts, to artichoke, to greens bitter greens like mustard greens, collard greens, kohlrabi, wild radish and many I think it’s about 30-40 vegetables in the brassica family. But just broccoli if you eat raw broccoli, steamed broccoli don’t cook the heck out of it. There’s just an amazing series of chemicals that have very strong influence on cancer cells and suppressed cancer cells. Second it might be mushroom system. Mushrooms are very rich in vitamin D, rich capture in the immune system is another component mushroom cultivated with cancer but you can just get the plain old cheap white button mushrooms. And if you’ve had breast cancer and you have a habit of eating those plain all white button mushrooms your risk for recurrent breast cancer is down. You can get those with soy, tofu organically it does with broccoli last give a shout out to turmeric, turmeric, turmeric. The little root looks like a warm little root or you shave it, you can juice it, you can put it in tea, you can buy of course the dried spice its not a food now it’s a spice but turmeric is amazing.

[03:39] REENA JADHAV: I love all of those and they’re such wonderful ways to cook these. I think one of the challenges we face as you know when you start to transition to a plant based diet from having been a meat dominant eater is recipes. And Dr. Joel your book has amazing recipes so for those of you listening to this book master class make sure you pick up the book and check out the recipes to help with the transition. Yeah there you go.

[04:05] DR. JOEL KAHN: It is a 21 day eating plant recipes as you read there. I don’t go home every night and read my own book.

[04:15] REENA JADHAV: And I will give one quick recipe for meat eaters. Take those mushrooms grind them up in a blender so kind of the small fine grained ground up and cook it in just coconut, amino and basil. And it almost tastes like basil chicken so you can fool yourself into thinking you’re eating basil chicken but this ground up mushroom you know blanched with basil leaves and you can try them out there as well.
