I love a good cookie! Or 5 …in fact cookies have been a part of my morning tea ritual for as long as I can remember. So when I realized I had to go sugar-free two years ago, this was my hardest habit to kick. I struggled with not detouring into the grocery store to buy a pack of cookies daily. I gave in about 4 times a week, bought and ate a pack while driving.
It wasn’t working. I had no willpower. So, I decided to do the next best thing, not deprive myself but find a satisfying alternative. I started experimenting and came up with yummy variations that were all gluten, dairy and sugar-free! Here’s one that I love because it takes 10 minutes to make and is full of protein and healthy fats. Enjoy!
INGREDIENTS
- 1 Egg
- 1/2 cup organic creamy almond butter (buy my fav here)
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla
- Lakanto sweetener or Stevia to taste (I used 1 teaspoon of Lakanto)
- Variation: add melted chocolate or cocoa paste for a denser richer taste or use chocolate almond butter
RECIPE
Step 1: Gather the ingredients.
I only use eggs from a local lady who has chickens in her backyard! I actually know these chickens and watch them peck around the garden when I go to get freshly laid eggs. Find a local cage-free egg source, it’s so worth it!
My favorite Almond butter comes from Philosophers Stone, as its sprouted and stone ground in addition to being organic. Is there a taste difference? YOU BET! It’s so much creamier and tastier than any other organic almond butter. I tend to binge eat it raw, its that good! They also have a chocolate almond butter which I use to make the chocolate version of these cookies.
My favorite Vanilla is this organic vanilla as it has a richer flavor to it that doesn’t seem to evaporate as much as the others I have tried.
Between Lokanto and Stevia, I am always a little torn. Lokanto tastes wayyyy better but it always has Erythritol mixed in which I prefer not to ingest. Stevia green leaf just doesn’t bake the same and it’s an acquired taste which, after 15 months, tastes like sugar to me. So its a decision I make at the moment of blending – what do I feel like today, Lokanto or Stevia?!
